Give me one way to make a bratwurst better. Bacon. Stuff it with cheese. Smoke it. Then grill it to make the bacon crispy. Oh, that’s more than one, but I did them all. Then put it in a nice bun. I hope you like it.
5 bratwursts (Hayfield Farms)
10 strips bacon (Hayfield Farms)
5 ounces cheddar Jack cheese
5 hot dog buns
Pickle relish
Onions, diced
Soak wood chips in water for 30 minutes.
Set up Webber grill with coals on one side. Light and let get hot.
Cut slit in brat; place cheese inside.
Wrap brat with two strips of bacon.
Add handful of wood chips to coals.
Place in a foil pan; place on hot side of grill.
Cook for 15-20 minutes or until bacon is crispy and internal temp is 165.
Then grill to crisp bacon.
Place in bun with onions and relish and mustard.
