Start with a classic, update it and transform it into a flavor bomb. Bacon wrapped scallops are on a lot of menus but I used beef bacon then pesto with lemon zest to freshen the dish up. So we now have surf and turf all in one bite. I hope you like it.
10 large sea scallops
8 strips of beef bacon
8 ounces pesto
2 tablespoons lemon zest
Toothpicks.
Heat oven to 375.
Add beef bacon on a rack on sheet pan. Cook for 10 minutes. Partially cooked but not done. Or cook in a skillet.
Let cool.
Wrap bacon around scallop.
Mix lemon zest with pesto.
Top with scallop with pesto.
Place scallops in oven and cook for 4 minutes. Turn over and add pesto to top. Cook for 4 minutes.
Serve.
