In my youth I went to St Mary’s school, literally around the block, and if you bought peanut butter and jelly this was not your lunch on Fridays this is not when you bought. You got what resembled fish sticks, fries, and something in the third compartment that I have blocked out of my memory. I saw salmon fish sticks on line and liked the concept but not the flavor. Most fish sticks start with pollack or cod, not salmon. Now, because of that change, normal tartar sauce is out; we can use a buffalo blue cheese sauce. The breading seasoning can be upgraded because the salmon can stand up to it. I hope you like it.
1 pound salmon thicker piece
1 cup milk
Salt and pepper
1/2 cup rice flour
1/2 teaspoon Old Bay seasoning
1/2 teaspoon salt substitute
4 egg whites
1 cup Panko bread crumbs
1 teaspoon Old Bay seasoning
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
Cooking spray
Cut salmon into 1 x 3 inch pieces.
In station 1, add milk and salmon and soak for 20 minutes.
Coat salmon with salt and pepper.
In station 2 add rice flour, 1/2 teaspoon Old Bay, and salt substitute. Coat salmon with rice flour mixture.
In station 3, add egg whites and coat salmon.
In station 4 add Panko, 1 teaspoon Old Bay, garlic powder, and black pepper. Roll salmon and coat.
Spray bottom of air fryer with cooking spray. Add salmon but don’t crowd; cook for 7 – 9 minutes until outside is crispy.
Dipping sauce:
1/2 cup bibinbop sauce
1 teaspoon Texas hot sauce
3 ounce blue cheese crumbles
Mix all ingredients.
