Bleu Cheese Breakfast Sandwich

I was wondering why I never see bleu cheese on a breakfast menu. If you can have steak and other items, why is bleu cheese blacklisted? So I decided to make a dish that featured this item as well as some bacon, arugula, chives, tomatoes, and sourdough. Then some creamy eggs to keep everything from falling off the bread. I hope you like it.

4 slices sourdough toast
6 large eggs
1/4 cup cream
1/4 cup chopped tomatoes
1/4 cup bleu cheese crumbles
1/2 cup arugula
Bacon
1 teaspoon hot sauce
Salt and pepper
1 tablespoon chives

Oil for cooking, butter for toast.

Cook as much bacon as you want as crispy as you want.

In a large skillet on medium low, add oil to coat bottom.

Add arugula and tomatoes and cook until wilted.

Add garlic, salt, and pepper.

Toast bread.

Mix eggs and cream together and add to skillet.

Stir gently until eggs begin to set up on the edges and add bleu cheese. Let sit for 1 minutes and stir.

Add hot sauce and chives and cook eggs until desired doneness.

Butter bread.

Add eggs on top of toast. Top with bacon.

    1. I use a local company named Poppi’s mostly but I do use Franks also

    Have you tried blue cheese on sausage patties with a fried egg and crumbled crispy bacon on top put all this in a square bun spread with hot mayo. Now that’s a breakfast sandwich!
