While vacationing in Corolla, NC, I happened on a seafood store in beautiful downtown Duck. They had some drum fish which can be red drum or black drum; without the skin, you kinda got to take their word for it. Now, if my brother Mike we’re here, I would have blackened it, but he was not. I baked it with wine, butter, capers, lemon, spices, and a dusting of flour to hold everything on. I hope you like it.
1 1/2 pounds drum (2 fillets)
1/4 cup corn muffin flour
1 tablespoon Old Bay, divided
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 teaspoon garlic powder
4 tablespoons butter, melted
3 tablespoons white wine
3 ounces capers
Sprinkle fish on both sides with 1/2 of the Old Bay.
Mix flour with remaining Old Bay, black pepper, paprika, and garlic powder.
Place fish on a baking sheet lined with foil.
Sprinkle fish with wine, butter, and capers. Add a thin coating of flour mixture.
Bake for 16- 20 minutes.
Garnish with lemon.
Serve.
