Traditionally this sandwich is chorizo, potatoes, a guajillo chili dip, onions, and a salty cheese on a crusty roll. That is a great combination. Of course I made some changes. Why not use steak instead of the sausage? So I got a hanging tender steak from A to Z Butcher Shop in Stafford and put a chorizo spice rub on it. The salty cheese is bad for the blood pressure, so how about some Asiago cheese? I still used a crusty roll – that should count for something. Now, I also deviated on the sauce; I did start with a some dried guajillo chilis, onion, and garlic, but added some dark chocolate and some honey. I hope you like it.
1 pound hanging tender or rib eye steak
1 teaspoon salt
1 teaspoon ground garlic
1/2 teaspoon black pepper
1/2 teaspoon ground guajillo chili
1/2 teaspoon arbol chili
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon ground coriander
2 large potatoes cut in 1-inch cubes, par boiled
1 medium yellow onion, diced
Sauce:
4 dried guajillo chilis
2 quarts hot water
4 cloves garlic
1 medium onion
1 teaspoon salt
2 tablespoons honey
2 ounces dark chocolate
4 hoggie rolls
1/3 cup Asiago cheese
Oil for cooking.
Begin sauce by combining hot water, guajillo chilis, onion, and garlic cloves and let rest for 30 minutes.
Make rub by mixing salt, garlic powder, black pepper, ground guajillo chili, arbol chili, smoked paprika, cumin, and ground coriander.
Rub steak with spice mix.
Move chilis and onion mix to a blender. Purée and strain to a sauce pan; add chocolate, salt, and honey.
Heat on medium heat to reduce by 1/3. Stir occasionally.
Heat oven to 350.
Add oil to pan and cook potatoes, diced onion, salt and pepper until brown and crusty.
In an oven-safe skillet coat bottom with oil. Add rub steak and cook for 6 minutes per side. Then place in oven for 10 minutes. Let rest for 10 minutes then slice thinly.
Add steak to potatoes and add 1/2 cup sauce.
Cut rolls in half; coat inside half with sauce and place in toaster or regular oven at 350 until brown and crusty.

Top roll
Serve
