Eggnog Cheesecake

We grew up with eggnog, avoiding it mostly. Someone (Dad) always put in more rum than nog making it more for adults than a kid. (Eggnog isn’t supposed to burn.) Now, I asked my friends on Facebook what cheesecake should I do next. I was surprised that the winner came down to fig or eggnog. I chose eggnog. Now, I wanted to make bite size, well maybe three bites. The other changes Southern Comfort and ginger snaps. I hope you like it.

Crust:
1 cup crushed ginger snaps
1/4 cup butter, melted
1 tablespoon sugar
Filling:
16 ounces cream cheese
3/4 cups sugar
1 teaspoon vanilla
1/2 cup eggnog I used Southern Comfort flavor
3/4 teaspoon nutmeg
3 large eggs
More nutmeg to sprinkle

Heat oven to 325.

Mix crushed ginger snaps with butter and sugar.

Line mini muffin pan with paper cupcake liners.

Add ginger snap mixture to cover bottom.

In a bowl cream cream cheese and sugar until smooth; add eggs one at a time and mix. Add eggnog and nutmeg and beat for two minutes.

Pour mixture 3/4 full of cupcake liner.

Sprinkle with nutmeg.

Bake for 20-25 minutes until a toothpick come out clean.

  4. Hadn’t heard of SOUTHERN COMFORT eggnog….does it have the cream and spices already in it? tHEY SOUND DELISCIOUS! I like your graduated preparation pictures!

    1. It is a commercially produced item which was the seed to the recipe. I want to do pictures like that every time but I forget.

      1. And perhaps reverse the order–put the ginger cookies in the bottom of the cups at the top of the order, rather than the bottom? 😀
