Pumpkin Chocolate Pinwheels

Pumpkin and chocolate are a great combination. Adding pumpkin pie spice makes a pinwheel cookie a new fall treat. Now, this is another cheater recipe; I frequently use package cookie mixes as a time saver. I hope you like it.

1 package sugar cookie mix
Start by dividing into two bowls
Bowl 1:
1/2 cookie mix
1 1/2 tablespoons cocoa powder
4 tablespoons softened butter
1/2 beaten egg
Beat until mixed and refrigerate for 1 hour.
Bowl 2:
1/2 cookie mix
1 1/2 tablespoons flour
4 tablespoons butter
1/2 beaten egg
1/2 teaspoon vanilla
1 teaspoon pumpkin pie spice
Beat until mixed and refrigerate for 1 hour

On parchment paper with a dusting of flour, roll out each dough so the two mirror each other. One might be a little larger than the other; use that one as a base.

Heat oven to 375.

Roll up into a log. Refrigerate for an hour.

Slice into 3/8 inch slices.

Bake for 8-10 minutes.
