Meatloaf Cupcakes

I saw this online and since I’ve been hankering for some meat loaf, it’s time to have some fun. This looks great, and the meat loaf is traditional style of pork, veal, and beef. I did cheat and use some store bought gravy and box potatoes because the box potatoes pipe better than scratch which are too lumpy. I hope you like it.

1 pound ground beef
1 pound veal
1 pound ground pork
1 cup Panko bread crumbs
1 cup marinara sauce
2 eggs
1 cup parmigiana cheese
2 teaspoons Old Bay seasoning
1 teaspoon black pepper
1 teaspoon parsley
1 teaspoon garlic powder
Box mashed potatoes per package directions
12 ounces frozen mixed vegetables
1 jar beef gravy

Heat oven to 350.

In a bowl add beef, pork and veal.

Add Old Bay, parsley, garlic powder, and pepper.

Add panko, cheese, and marinara; mix all ingredients together until combined.

Spray jumbo muffin pan with oil. Line with large liners and add loaf mix.

Bake for 50-55 minutes.

Make potatoes per package instructions; make 8 servings.

Microwave vegetables per package directions.

Heat gravy.

Add cooked potatoes to a piping bag.

Remove meatloaf from pan and pipe potatoes over meatloaf in a soft serve ice cream cone fashion.

Add vegetables.

Top with gravy.

Serve.

  1. Yummy. Cupcakes with tea makes a great food combination. I can eat this in the morning because cupcakes and bread are the same thing🙌🔥😍😍
