I needed some quick cupcakes to bring to a doctor’s appointment, so I cheated; I did a box mix. I did doctor it some (see what I did there?). I switched out the water and added coffee, then I added some chocolate vodka. That was the inside. On the outside I used my cream cheese frosting but added cocoa, chocolate vodka, and Kailua with just a pinch of salt. Cupcakes in an hour and a half. I hope you like it.
1 Duncan Hines Devilsfood cake
8 ounces coffee
3 large eggs
1/2 cup oil
1 teaspoon chocolate vodka
Frosting:
8 ounces butter at room temp
8 ounces cream cheese at room temp
1 pinch salt
1 teaspoon chocolate vodka
1 teaspoon Kailua
1 teaspoon chocolate vodka
1/3 cup dark cocoa powder
3 1/2 cups powdered sugar
Preheat oven to 350.
In a bowl mix cake mix, eggs, and oil. Mix for 2 minutes.
Add coffee and vodka. Mix for 4 minutes.
Line cupcake pan with liners. Add batter.
Bake for 22-25 minutes.
Remove cupcakes to a cooling rack.
In a clean bowl mix butter and cream cheese until combined and smooth.
Add chocolate vodka and Kailua.
Add cocoa powder and mix.
Add powdered sugar 1/2 cup at a time and mix.
Mix until smooth.
When cupcakes are cool, frost.


These look and sound devilishly good and heavenly tasty!

Adding a cube of cream cheese to your buttercream frosting gives a desired creaminess to the taste and it holds the shape well with the frosting especially if you use a bag and tips. The chocolate vodka sounds good. At our store, we used to sell icing shots infused with liquor. One of the teachers nearby loved them!

I agree about the cream cheese! It’s a sneaky way of adding a bit of that certain “something” to evoke the taste of carrot cake frosting or cheesecake!
