Greek Taco

I love me a gyro, and if I could have a taco on the side, life would be almost perfect. So I was at the Stafford Farmers Market and found some Greek lamb meat from Vista Springs LLC. I combined the best of both worlds: a crunchy taco shell, ground lamb with Greek seasoning, feta, tomatoes, onions, and lettuce. I also added some tzatziki to finish it off. I hope you like it.

1 pound lamb meat from Vista Springs LLC
1/2 cup spinach, cooked
1 teaspoon garlic powder
1/2 teaspoon marjoram
1 teaspoon Greek oregano
1/2 teaspoon black pepper
4 ounces feta cheese
1 tomato, diced
1/2 red onion, diced
6 taco shells
1/2 cup tzatziki sauce

Oil for cooking.

Heat oven to 350.

Add 2 tablespoons oil in a pan on medium and brown lamb; add spinach, oregano, black pepper, and marjoram. Cook for 4 minutes.

Add taco shells to oven and cook for three minutes.

Assembly:
Taco shell
Feta cheese
Lamb meat
Lettuce
Tomato
Onion
Tzatziki sauce

Serve
