Chorizo Pimento Burger

After my weekly trip to the Warrenton Farmers Market I came back with some of American Heritage Farms chorizo. I went back to to New Orleans to for the choriz Po’ boy so a griddled chorizo patty with pimento cheese topped with spicy mayo. I also used a green tomato for a little acid. I hope you like it.

1 pound chorizo
8 ounces pimento cheese
1 green tomato
1/4 cup mayo
1 tablespoon hot sauce
2 Kaiser rolls

Griddle chorizo for 6 minutes on each side make sure the internal temperature is 165.

Toast buns while burgers are cooking.

Add 2 ounce of pimento cheese to burgers.

Mix mayo with hot sauce.

Add mayo to top bun.

Add tomato slice to bottom bun.
