There is a name for this in Italian, but I couldn’t find it. Like Bigfoot I know it exist but isn’t readily available. If you know what it is, please drop a note. Here is the dish: canned pizza dough, a layer of mortadella, ricotta cheese, mozzarella cheese, and pesto. An Italian bologna and cheese sandwich. Then cut into cinnamon roll size pieces and baked until golden brown. I hope you like it.
1 can thin crust pizza dough
1/2 pound mortadella, cut thin
8 ounces ricotta cheese
1/2 cup mozzarella cheese, shredded
1 tablespoon Italian herbs
6 ounces pesto
2 tablespoons garlic, minced
Heat oven to 400.
Lay out pizza dough.
Lay out mortadella in one layer over pizza dough (overlapping is ok).
Add garlic, spread over mortadella.
Layer drop spoons of ricotta and spread.
Add Italian herbs and 3 ounces of pesto.
Add mozzarella.
Roll dough.
Cut the roll into 3” pieces.
Add to parchment-lined baking sheet.
Top with remaining pesto.
Bake for 25-30 minutes or until golden brown.
