I’m going to make a short story long. I’ve been making chicken skin dog treats for a while, and one of the dogs said I didn’t know what I was missing. I took the good boy’s advice. So I got some chicken skins at the Stafford Farmers Market and made this recipe. The dog knows. Well, that’s not as long of a story as I thought. You start by baking the chicken skin until it’s like crispy bacon. The rest resembles a BLT, just no bacon, seasoned chicken skin instead. Makes me wonder what other things we should be stealing from our dogs. I hope you like it. (I really saw this on TV, but the story is more fun.)
1 pound chicken skins
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon Old Bay
1 head leaf lettuce
1 beefsteak tomato, sliced
4 slices sourdough bread, toasted
Mayonnaise
Preheat oven to to 375.
Mix seasonings and sprinkle evenly on skins.
Place skins flat on a foil-lined sheet pan.
Bake for 25-30 minutes until skins are brown and crispy.
Remove skins and place on paper towel to drain fat.
Assembly:
Bread
Mayo
Lettuce
Tomato
Chicken skin
Mayo bread
Serve.







Hey Dan, I’ve got to try this for sure! Does the skin pull off the sandwich in one sheet or are you able to bite through it? I was just thinking to maybe chop it into bite sized pieces when it cools from the oven. Thanks for posting this fun recipe!

Like good bbq I cook it until it’s crunchy enough to bite thru. I am blessed to know a lot of farmers thru local farmers markets so I can get things most people don’t want.
