Greek Empanadas

As a mad scientist I feel a duty to combine as many cultures into common foods as possible. Here is my latest foray into that quest. I love gyros, and I have discovered empanadas, so I thought why not combine the two? So I went where I get my gyros, Manhattan Pizza, and got some gyro meat. (I can make my own, but it takes too long.) I added some cucumber, tomatoes, and feta, but the lettuce won’t air fry well. The tzatziki dipping sauce finishes the dish. I mentioned that I air fried it to make it a healthier dish. I hope you like it.

3/4 pounds gyro meat
3 Roma tomatoes
4 ounces chopped cucumber
4 ounces feta crumbles
1/2 yellow onion, diced
10 ounces empanada wrappers
8 ounces tzatziki sauce

Lay out empanada wrapper using a rolling pin to flatten and stretch.

Add 2 tablespoons gyro meat to wrapper.

Add 1/2 tablespoon onion, feta, cucumber, and tomato.

Seal empanadas with a little water.

Spray with cooking spray.

Add to air fryer and air fry for 7 minutes at 350 degrees on both sides.

Serve with tzatziki sauce.
