Jicama Apple Salad

I like this recipe with shellfish as a side to break up the richness. Jicama is slightly sweet, the apple brings both sweetness and tartness the green onions brings a bite. The dressing has the lime to brighten the flavors honey for sweetness with shallots to contrast. Salt and pepper with some Dijon allow the dressing to combine. I hope you like it.

1 bulb jicama cut into match sticks
3 honey crisp apples cut into match sticks
3 radishes cut thin
2 tablespoons finely sliced green onions
Dressing
2 tablespoons honey
2 tablespoons lime juice
1 tablespoon Dijon mustard
1 tablespoon shallot diced
Salt and pepper to taste
4 tablespoons olive oil

In a bowl mix honey, lime juice shallots and Dijon slowly add olive oil.

In a bowl add jicama, apples, radishes and green onion.

Add dressing to salad.

Serve.
