It used to be a tradition that I would have a banana split every spring; that was before my cholesterol went over 200. So this is a memory that is forward looking. I found some caramel waffle cookies that are the base of this dessert. Then I made layers of chocolate mousse, bananas Foster, and rum strawberries topped with whipped cream. No cherries because there is enough going on. I hope you like it.
Now, the base is walking waffles which are popular in Europe: mini waffles covered in caramel that are a popular item with coffee. I found these at Publix mega-mart.
1 cup brown sugar
4 tablespoons butter
4 ounces milk
1 banana
1 cup strawberries, quartered
1/4 cup sugar
1 teaspoon rum
1 cup chocolate mousse
6 walking waffles
1 can whipped cream
In a skillet on medium heat, add brown sugar and butter;bring to a boil. Cook for 5 minutes.
Add milk and cook for 5 minutes. Let cool.
In a bowl add strawberries, rum, and sugar; let sit for 5 minutes.
Make or buy the mousse.

1/3 cup strawberries
Walking waffle
Banana mixture
Whipped cream
