South Beach Pulled Pork Butt

When I lived in Florida I got my first taste of Cuban and Caribbean flavors. Sour orange, mango, sofrito along with the flavors of allspice, ginger and clove. This is all on a slow cooked pulled pork. The only thing I skipped was the banana leaves which were not available at my megastore. I did this in the oven because it was raining. I hope you like it.

8 pound pork butt(I got mine at A to Z Butcher)
10 ounces brown sugar
2 tablespoons salt
1 tablespoon paprika
2 tablespoons chili powder
1 tablespoon garlic powder
1 teaspoon clove
1 teaspoon allspice
1 teaspoon ginger
8 ounce sofrito
12 ounces orange juice
Juice of 3 limes
8 ounces mango juice
8 ounces sofrito

Heat oven to 275.

In a bowl mix brown sugar, salt, chili powder, paprika, garlic powder, allspice, ginger, and cloves.

In a large pan add pork butt. Then rub with spice mixture. Add orange juice and lime juice to bottom of pan. Place in oven for 3 hours.

Check temp it should be at 110-120. Add 8 ounce sofrito and coat top. Cook for additional 2 hours.

Check temp it should be 165-170. Cover with foil and cook until 180 degrees about 90 minutes.

Mix mango juice with sofrito glaze the pork butt raise temp to 325 cook uncovered until temp is 195.

Let rest for 20 minutes and pull pork.

Serve as a taco with pickled onion, and coleslaw.
