This is a campfire brunch recipe so everything has to be skillet based. So I replaced the muffin, the hollandaise, and the ham. The egg stays with some chicken fried steak(I said Texas) and Texas toast. The black pepper gravy is a nice finish to the dish with just a little hot sauce and not the one from New York City.(New York City!). I hope you like it.
2 8 ounce cube steak
8 ounces flour
1 tablespoon chili powder
1 teaspoon garlic
1/2 teaspoon salt
1/2 teaspoon black pepper
8 ounces country gravy in a jar
2 slices Texas toast
2 over easy eggs
Favorite hot sauce.
In a pie pan mix flour, chili powder, garlic powder, salt and black pepper.
Dredge steak in flour mixture add to skillet on medium heat with 1/4 inch cooking oil.
Cook 4 minutes on each side and place on paper towel.
Heat gravy.
Fry egg to over easy.
Cook toast to desired doneness.
