Air Fried Zucchini Blossoms

This is a spring time dish that is hard to find. I was at the Warrenton Market and saw some fresh goat cheese. The next day at the Stafford market, I saw zucchini blossoms, and I went work. I added goat cheese, Parmesan cheese, fresh basil, and some simple salt and pepper. I then put on a crunchy coating and placed it in the air fryer. I hope you like it.

Zucchini blossoms
8 ounce goat cheese (Happy Creek Cheese)
4 ounces Parmesan cheese
1 tablespoon fresh basil
Salt and pepper
4 ounces rice flour
1 egg
6 ounces seasoned panko breadcrumbs

Open blossoms and remove the pestle from inside.

In a bowl beat goat cheese, Parmesan cheese, basil with salt and pepper until smooth.

Pipe cheese mixture into zucchini blossoms.

In bowl 1 add rice flour. Add blossoms and coat.

In bowl 2 add egg and beat. Dip blossoms to coat.

In bowl 3 add panko and dip blossoms into panko to cover.

Add to air fryer and spray with cooking spray.

Air fry for 6-7 minutes until crispy.

Serve.
