I was going to a cookout with burgers and hot dogs so I wanted something different so I did this recipe. It has bacon, balsamic vinegar, onions, garlic, brown sugar and some spices. Now comes the smoky bourbon which adds a richness to the jam; just do not operate machinery for 30 minutes. It has sweet, salty, spicy and a little umami. It goes with burgers, hot dogs and maybe Frosted Flakes.(I’m kidding). I hope you like it.
1 1/2 pounds bacon from A to Z meats.
2 cups onions chopped fine
5 cloves garlic minced
1 tablespoon chili powder
1 tablespoon smoked paprika
1 teaspoon cayenne pepper
3 ounces bourbon
1 cup dark brown sugar
1/2 cup ketchup
1/3 cup balsamic vinegar
1/3 cup apple cider vinegar
Cut bacon into 1 inch pieces.
Heat skillet to medium add bacon cook until brown.
Remove bacon to a paper towel.
Drain all bacon fat except 3 tablespoons.
Add onions cook until caramelized.
Add chili powder and paprika cook for 2 minutes.
Add bourbon and cook for 3 minutes.
Add balsamic vinegar and stir. Cook for 2 minutes. Stir occasionally.
Add brown sugar and cook for 4 minutes.
Add ketchup and apple cider vinegar and cook until mixture thickens.
Let cool.
Serve with hot dogs, hamburgers or any meat.







Sounds great! Looks like it, or a slight variation of it, might work well as a bbq beans sauce too.
