Flounder is a mild white fish that tastes like most other mild white fish. I have done the crab topping so that has been done. This time I’m spicing it up a bit with crab but wrapped and rolled with Capicola ham. This in a hollandaise sauce to make sure everything is working together. I hope you like it.
1 pound flounder
6 ounces crab claw meat
8 slices Capicola ham
12 tablespoons butter melted
3 ounces white wine
6 ounces seasoned panko breadcrumbs
1 teaspoon Old Bay seasoning
In a bowl mix crab meat, Old Bay, panko and wine. Add 8 tablespoons of butter and mix.
Add Capicola to flounder fillet.
Add 2 tablespoons crab mixture and roll up.
Heat oven to 350.
Add Remaining butter to top of roll ups.
Bake for 25 – 30 minutes.
Serve with packaged hollandaise.
