Northern Michigan Omelette

Here are some great flavors of the North country. Start with smoked whitefish, sharp Pinconning cheese, crème fresh, heirloom tomatoes and lots of fresh herbs. This is a perfect way to start your day while watching a ferry take off from the dock heading to Mackinac Island. I hope you like it.

2 beaten eggs
1 teaspoon chopped chives
1 ounce milk
2 ounces smoked whitefish boned and flaked
2 ounces Pinconning sharp cheese grated
1 teaspoon crème fresh
2 teaspoons chopped tomato
1 teaspoon diced red onion

In a bowl beat eggs, milk and chives.

Heat a 8” non stick pan coated with cooking spray to medium.

Add egg mixture count to 10 and stir. Let eggs set. About 2 minutes.

Add red onions, tomatoes, cheese, crème fresh and whitefish. Cook for 3 minutes.

Fold over omelette.

Top with chopped dill.

Serve.
