I was at the Long Family Market in Stafford and got some fresh veggies from C & A produce. I got the making of a green tomato salsa. Green tomatoes, dandelion greens, jalapeños and red bell peppers. To those I added some honey, salt pepper, lime juice and avocado. The slight bitterness of the dandelion green with the heat of the jalapeño and the sweetness of the honey bring a nice balance. I served it on BBQ chicken and it brought freshness. I hope you like it.
4 green tomatoes quartered
1 red bell pepper seeded
1 jalapeño pepper seeded
1 bunch dandelion greens ribs removed
2 limes
1/4 cup olive oil
1 teaspoon salt
1 teaspoon pepper
2 tablespoons honey
2 avocados diced
Heat oven to 400.
Place tomatoes, red peppers and jalapeños on a baking sheet and bake until they begin to brown.
Add olive oil, dandelion greens, and roasted vegetables and blend until smooth.
Add diced avocado.
Add lime juice, salt and pepper.
Use on chicken or fish.





Great idea to use dandelion!

I observed some tricks to make the green salsa ,for the Mexican snacks. The raw version is for the “sopes” , added by the user. While , boiled tomatoes are used for the enchiladas, filled with chicken. Then, the toasted tomatoes are for smashed salsa, for the grilled steaks. All 3 are a delicious bet!
