Lobster Mac Stuffed Green Pepper

I’ve had stuffed peppers all my life, a green pepper with rice, hamburger, and tomato sauce. That’s it, no surprises, traditional and boring. I just changed the rules you have the right to break the rules. I stuffed mine with lobster meat, onions, mushrooms and mac and cheese. Did I just hear a shut your mouth Mac and cheese? This is the cheep box mac and cheese with some extra Velveeta cheese. Creamy, the lobster flavor and the earthy mushrooms. I hope you like it.

1 box Kraft macaroni & cheese
5 ounces Velveeta cheese
2 shallots
6 ounces shiitake mushrooms diced
1 teaspoon Old Bay seasoning
8 ounces lagostino lobster
4 green peppers cored

Cook Mac and cheese to package directions except only cook past 3/4 done drain and add package cheese and Velveeta.

In a pan cook mushrooms and shallots in oil until slightly brown.

Defrost lagostino and add to shallots and mushrooms.

Add mushroom mixture to mac and cheese.

Add everything to green peppers.

Place in a baking dish.

Bake for 50 minutes.

Serve.
