Chipotle Cranberry Sauce

I’m doing a Southwest flavor turkey on the grill for a pot luck. As Eric Cartman famously asked “will we be having any side dishes with our frozen waffles?” Yes Eric we will be having some chipotle cranberry sauce. Now this is for the 55 and over Prilosec crowd so I took it easy on the heat but you know the the chipotle is there. Two other non traditional items instead of water orange juice and less sugar and a some local honey. I hope you like it.

10 cups fresh whole cranberries
12 ounces orange juice
1 1/3 cup sugar
2 tablespoons chipotle adobo sauce
2 chipotle peppers more if you want pain and suffering
Fresh local honey I used Erin Elderberry’s

In a soup kettle add cranberries, orange juice and sugar.

Place in medium high heat and bring to a boil. Cook for 5 minutes then reduce to simmer.

Cook until berries pop.

Add adobo and chipotle peppers add a little at a time you don’t want to get it irreparably hot. Stir to incorporate.

Taste to check spice level and add honey to moderate heat.

Let cool.

Serve.

    1. Sure. The pot luck is at 5:30 today. I’m doing a grilled turkey with prickly pear glaze to go with the cranberry sauce
