I had never used purple sweet potatoes before or ube as they call them in Japan. I decided to just reinforce the sweetness with a little Old Bay, some black pepper, maple syrup, brown sugar, cinnamon, and a lot of butter. I peeled and cut them into 1 1/2 inch rounds and baked them for 40 minutes. I hope you like it.
2 purple sweet potatoes cut into 1 1/2 inch rounds
1 stick butter cut into 1/4 inch pats
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Old Bay seasoning
1/2 cup maple syrup
1/2 cup dark brown sugar
Lay sweet potato sections out in a baking dish.
Sprinkle both side of potatoes with salt, pepper and Old Bay seasoning.
Top with butter pay on top of each sweet potato section.
Top each section with maple syrup.
Top each secrywith brown sugar.
Sprinkle each section with cinnamon.
Bake at 350 degrees for 35-40 minutes.


I grew 59 pounds of purple sweet potatoes! I’ll have to try this recipe.
