PB Sparkling Jelly

Traditional thump print cookie with an alcohol twist. Prosecco strawberry jam with a package of peanut butter cookie mix makes a great pairing. And yes I cheated using a mix but I’ve already baked so many cookies I’ve lost count. The special jam is from The Sticky Spoon. I hope you like it.

1 package peanut butter cookie mix
3 tablespoons cooking oil
1 tablespoon water
1 egg
1 jar strawberry Prosecco jam

Mix cookie mix, oil water and egg until combined.

Refrigerate dough for 30 minutes.

Heat oven to 350.

Scoop 1 inch balls of dough onto a parchment lined cookie sheet.

Bake for 10-12 minutes.

When the cookies come out press an indentation in the top of the cookie a round measuring spoon works best.

Fill with jam.

Let sit for 45 minutes to set.

Serve.

Don’t be concerned with the missing cookies it’s quality control.
