I love traditional excess. Which in this case is a snickerdoodle which is traditional as can be as the outside of a sandwich cookie and filled with caramel. Now I cheated I started with a packaged cookie mix added more flour, baking powder and fireball. Then the addition of some Mexican caramel we have a decadent cookie. I hope you like it.
1 package Snickerdoodle mix
1/3 cup flour with cinnamon pack
1 tablespoon baking powder
1 egg
1 stick butter
1 teaspoon cinnamon
1 teaspoon fire ball
12 ounces dulce de leche
In bowl mix add cookie mix, flour, butter, water, egg and fireball.
Mix until combined.
Refrigerate for 1 hour.
Heat oven to 375.
Add cinnamon sugar mix to bowl.
Make 1 inch balls and roll in cinnamon sugar.
Add cookies to a parchment-lined baking sheet.
Bake for 9-11 minutes.
Serve.





I love snickerdoodles! My favorite ones are “Pumpkin Snickerdoodles” I like to sandwich two of them with peanut butter between them.
