I stole this idea from Andrew Zimmern and it’s perfect for a cold winter day of watching basketball. It has the classic combination of cherry tomatoes, basil leaves, mozzarella cheese and balsamic vinegar. The addition of goat cheese and some seasoning takes it to the next level. There is tart, tangy, creamy with a little heat. The texture comes from a crispy baguette. I hope you like it.
1 pint cherry tomatoes
8 ounce fresh mozzarella cheese
4 ounces fresh basil leaves
10 ounces herb goat cheese
3 tablespoons balsamic vinegar
1 teaspoon salt
1 teaspoon pepper
1 teaspoon red pepper flakes
1 teaspoon oregano
4 ounces fresh Parmesan
In an oven safe dish make a layer of goat cheese on the bottom.
Cut tomatoes in 1/2 and add to a bowl.
Tear basil leafs into small pieces and add to a bowl.
Cut mozzarella into small cubes.
Add salt, pepper, red pepper, and oregano to bowl and toss.
Add bowl to serving dish.
Top with balsamic vinegar.
Heat oven to 350.
Add dish to oven cook for 20-25 minutes.
Cut 1/4 inch slices on the bias in the baguette.
Toast.
Layout baguette toasts.
Top with hot caprese salad.
Finish with Parmesan ribbons.
