Slow Cooker Italian Ribs

I had a neighbor ask me for an Italian rib recipe for a slow cooker that wasn’t too spicy. So I sent her a questionnaire with all the possible variables. Which she returned and I took it from there. She cooked it and gave me her feedback, and I made her changes . Her feedback back led to the final result. It starts with some St. Louis ribs, has the oregano, basil, garlic, onions, and carrots. The additions after feedback were more spice, more herbs, and more seasoning, so the final recipe was all about more. I hope you like it.

Now, I didn’t take these the photos; my neighbor Linda did all the work and took the photos. It looks beautiful.

3 pounds St Louis ribs, skin removed
3 tablespoons salt
1 oregano
1 tablespoons fresh diced basil
1 teaspoon paprika
2 teaspoons crushed red pepper
1 teaspoon black pepper
Olive oil to coat
1 can plum tomatoes (30 ounce)
8 ounces marinara
1 sweet onion, diced
2 carrot, diced
3 cloves garlic
8 ounces red wine
1/4 cup red wine vinegar
2 tablespoons sugar (optional)

Mix salt, oregano, basil, paprika, pepper, and red pepper.

Rub ribs with olive oil.
Add rub to ribs.

Let rest for 30 minutes,

Cut ribs to fit crockpot.

Brown ribs set and set aside.

Add onions, carrots and garlic and sauté.

Deglaze with wine and vinegar.

Add tomatoes.

Check seasoning; add sugar and herbs if needed.

Cook for 6-7 hours on low
3.5 -4 hours on high
