World Cup travelers to the USA and how they found our American staples so delicious. One of those items is biscuits and gravy. Europeans have found them to be absolutely disgusting looking but delicious didn’t taste. So my mind went to how someone from Spain would try to do American biscuits and gravy. The first change was Merguez sausage a spicy Spanish sausage. Next they might not use bread or biscuits they would use a potato layer.(That is because google when asked kept telling me to use Bisquick) I used hash browns with a Spanish onion as a base. Topped it with Manchego cheese and covered with the spicy gravy. I hope you like it.
1 pound Merguez sausage from Vista Springs LLC the Long Family Farmers Market.
2 tablespoons olive oil
1 clove garlic
2 tablespoons flour
1 clove garlic
2 cups milk
2 tablespoons olive oil
2 cups hash browns
1/2 Spanish onion diced
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon Old Bay seasoning
In a 9” skillet on medium heat add 2 tablespoons of olive oil and Merguez sausage and brown.
Add flour and stir cook until flour is incorporated and browns.
Add garlic and cook for 1 minute.
Add milk and stir until gravy is formed.
In a bowl add hash browns and mix.
Add 2 tablespoons of oil in a 10” skillet. Heat to medium.
Add potatoes and onions. Add 1/2 garlic powder , paprika and Old Bay.
Cook until brown on bottom. Flip over and add garlic powder, paprika and Old Bay seasoning.
Top with cheese.
Cook until bottom is brown.
Top with Merguez gravy.
Serve.
