Followers of this blog know that I don’t jump on the pumpkin spice bandwagon every fall. This cookie screams fall and if you can hear a cookie scream your oven is too hot. Pumpkin and pumpkin pie spices are right there but this isn’t a pumpkin spice cookie. There is a warm molasses vibe that makes sure there you know this is not a pumpkin spice cookie and I don’t jump on the pumpkin spice bandwagon. I hope you like it.
3/4 cup unsalted butter
1 cup sugar
1/4 cup molasses
1/4 pumpkin purée
1 teaspoon bourbon or vanilla
2 teaspoons pumpkin pie spice
1 egg
1/2 teaspoon salt
2 1/4 cup flour
1 teaspoon baking soda
Icing
1 cup powdered sugar
1 teaspoon vanilla
2 tablespoons milk
In bowl 1 cream butter, sugar, pumpkin purée and molasses until smooth.
Add egg and mix.
Add bourbon and mix.
In bowl 2 mix, flour, salt, pumpkin pie spice and baking soda.
Mix bowl 2 into bowl 1 in three installments.
Refrigerate for 30 minutes.
Heat oven to 350.
Scoop dough on a parchment lined baking sheet.
Bake for 9-12 minutes until slightly brown on the edges.
Move to a cooling rack.
In a bowl mix powdered sugar, vanilla and milk until smooth.
Coat cookies with glaze.
Top with candy pumpkins
