Stacked Eggplant

1 large eggplant cut in 3/4 inch slices
3 tbl spoon Balsamic vinegar
3 tbl spoon Olive oil
1 large tomato
2 table spoon Italian dressing
Feta cheese or goat cheese
Cut tomato into 3 slices 1/2 inch
Brush with Italian dressing

Mix balsamic and olive oil
Brush both sides of eggplant with mixture
Grill on medium high for 5 minutes
Turn and grill for additional 3 to five minutes
Place one eggplant slice
Place tomato slice
Add feta cheese
Add second eggplant slice
Top with balsamicStacked Eggplant
