Frittata

8 large eggs
1 cup half and half
1 pinch salt
10 grinds of fresh pepper
1 bunch asparagus
1 cup grated cheese (Swiss, asiago, or other mild white cheese)
1 cup chopped ham (not country ham)
1/2 cup green onion

Preheat oven to 350

Chop ham into bite size pieces
Cut off bottom of the asparagus stalks off. Chop into bite size pieces
In a large bowl mix eggs and half and half salt and pepper beat for 3 minutes with whisk.

On stove over medium heat add ham and asparagus with oil.

Cook for 5 minutes stirring occasionally.
Spray pan with pam
Pour in egg mixture
Add cheese
Cook until the outside egg set
Place in oven bake for 40 minutes or until a toothpick come out clean
Remove top with chives
Serve with fruit
