Pumpkin Spice Pigs in a Blanket

Grandma Molly’s pancake mix

Dry ingredients
1 1/4 cups AP flour
1/2 teaspoon salt
1 teaspoon baking powder
1 1/2 teaspoon baking soda
1/2 teaspoon cinnamon (I always add extra cinnamon)
1/4 teaspoon ground ginger
1/4 teaspoon ground clove
1/4 teaspoon ground nutmeg
1/4 teaspoon allspice
Wet ingredients
1 egg
1 1/4 cup whole milk or butter milk more liquid if too thick
Butter for griddle
Mix dry ingredients
Add wet until just mixed (don’t over mix)
Let rest for 20 minutes
Your patience will be rewarded

Link sausage (maple or sage)
Brown sausage in skillet

Heat griddle to medium high
Pour pancake batter on griddle
When bubble form on top flip
(The first batch seldom turn out perfect)
Wrap sausage with pancake

Serve with syrup or…………………..

Bourbon maple sauce

1/2 oz bourbon or bourbon extract
8 oz maple syrup
Pinch cinnamon
Cook for 15 minutes on medium low

If you want to use a pre package pancake mix add 1/2 teaspoon baking powder and 1/4 baking soda.

Makes 6 pancakes
