1 pork tenderloin 1 1/2 pounds
1/4 cup teriyaki sauce low sodium
15 – 20 crunchy gingersnap cookies crushed fine
3 tablespoons cooking oil
1/2 teaspoon pepper
In 1 gallon kitchen bag place tenderloin teriyaki and pepper let sit for 20 minutes turning every 5 minutes to coat.
Heat oven to 350
Roll tenderloin in ginger snaps
Add oil to oven safe pan and bring to medium
Heat oven safe pan to medium add oil add coated tenderloin
Brown on all sides
Bake in oven for 15-20 minutes or until pan meat thermometer reads 145 degrees
