Stuffed flounder

4 flounder fillets about the same size
8 oz lump crab meat
1 stick butter
6 oz Italian bread crumbs
8 oz white or rose’ wine
1 oz of Italian breadcrumbs for topping

In medium sauce pan melt half stick of butter
Add crabmeat stir
Add 4 oz wine
Add bread crumbs combine
Set a side

Preheat oven to 350

On a parchment lined baking sheet
Lay out two flounder fillets
Sprinkle with wine
Add a mound of crab mixture on each
Cut slit in two top flounder fillets
Place on top of crab mound even with bottom fillet
Sprinkle with remainder of wine

Melt remaining butter and coat top of fish

Bake at 350 for 25-30 minutes

Garnish with green onions

Serve with asparagus

You can substitute sole or dabs or any flat fish or stuff rainbow trout
