Potato Chip coated Scrod

Scrod (Special catch received on deck) it can be any white fish that is smaller than 2 pounds)  the term was made popular at the Parker House in Boston.  Here is my spin on it.

1 1/2 pounds cod haddock or other white fish fillets the fresher the better
1 Lemmon
4 oz white wine
4 oz sour cream and onion potato chips crushed(1/2 a bag)
2 oz Parmigiano Reggiano cheese
1 teaspoon parsley
Salt pepper
1/2 stick butter melted butter

Place fish on a baking sheet lined with foil or parchment

Pre heat oven to 350 degrees

Place fish on lined baking sheet
Sprinkle fish with wine
Coat with butter
Mix potato chips, parm, chives and parsley
Sprinkle over fish
Bake at 350 for 25 minutes

Serve with squeeze of lemon wedges

Serve with broccoli slaw or root veggies
