This doesn’t go in the bird because you have the spicy chorizo sausage.
5 cups cornbread dried into cubes
16 oz chorizo sausage uncooked I got mine at Rainbow Acres Farm Bristow VA
2 celery stalks
1 small red onion diced (any color is fine)
2 large eggs beaten
2 cups chicken stock
1 teaspoon black pepper
1/2 teaspoon paprika
1/2 cup chopped dried apricots
1/2 teaspoon salt
Mix cornbread cubes, pepper, paprika, celery, onion, apricots
Add sausage, mix, beat egg add and mix
Add 1 cup broth mix
Place in greased an 8 x 8 or 9 ” round baking dish or a spring form pan if you want to top with mac and cheese to follow.
Bake at 350 covered 45 minutes
Add chicken stock to moisten
Bake for 30 minutes uncovered until golden brown
