This is one of my Grandma Molly’s recipe that I hadn’t made in 25 years. I updated it a little and adjusted for my taste but here is it.
Dry
3 cups flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 teaspoon cinnamon
Wet
3 eggs
1 cup orange juice
1/2 cup melted butter
1 cup milk
1 cup blueberries
1 tablespoon grated orange zest
1/2 cup chopped walnuts
Mix flour, baking powder, baking soda, cinnamon, orange zest, and salt in a large bowl.
Mix butter, orange juice, milk, and beaten eggs and sugar in another large bowl.
Mix wet in to the dry until incorporated
Fold in blueberries
Preheat oven to 350
Place mixture into a greased 5 x 10 loaf pan until a tooth pick comes out clean 60 – 70 minutes
Let cool and remove to a cooling rack.
Glaze (Optional)
1/2 teaspoon orange zest 1/2 cup powdered sugar and 2 tablespoons orange juice. Mix and pour over bread when cool
