Simple Rainbow Trout

Preheat oven to 400
2 whole rainbow trout fresh (if the eyes are cloudy don’t buy them)
Take the head off and everyone will be happy
1 small red onion cut into ribbons
2 oz capers
1 tablespoon fresh parsley
2 oz white wine
1 large lemon cut into thin slices
1/2 teaspoon old bay seasoning
1/2 teaspoon pepper
2 tablespoons canola oil

Open trout season with old bay, pepper and wine
Add onion, capers, parsley and lemon slices.
Cover top with tablespoon of canola oil
Bake for 18 to 20 minutes
