This is a quick (sort of) recipe. I used pre-made cookie mixes to save time. If you want the long version of this recipe all the way from scratch, I will send it to you. But this required a lot less work and tastes great. We all know that peanut butter and chocolate are the flavors or spring.
You will need
2 packages of sugar cookie mix
2 eggs
1 1/2 sticks of butter
1 cup smooth peanut butter
1/4 cup cocoa powder
Chocolate dough
1 package sugar cookie mix
1/4 cup cocoa powder
1 stick butter softened
1 egg
Add the mix and the cocoa then add the softened butter and egg with a beater.
Peanut butter dough
1 package of sugar cookie dough
1/2 stick butter softened
3/4 cup peanut butter smooth
1 egg
Add the cookie mix, add the softened butter and the peanut butter and egg. Mix with a beater until completely mixed. Refrigerate for 1 hour.
Roll out the chocolate dough on parchment paper lightly coated with powdered sugar to about 1/4 inch about 9 by 6 .
Next, form the peanut butter dough into a log; I used 3/4 of the PB dough so the cookie would not be too big. Place that in the center of the chocolate and wrap the peanut butter roll with the chocolate.
Freeze for one hour
Preheat oven to 350
Take dough from freezer and cut into 1/4 slices
Bake for 8-9 minutes
Let cool then dip in melted chocolate; place on parchment to let the chocolate set up.
