I do not like spiral slice hams the first
1/2 inch of meat usually over cooks and they cost more
1 7-10 pound ham cooked (city ham smoked water added)
25 whole cloves
6 oz yellow mustard (I prefer Dijon don’t use spicy brown)
10 oz brown sugar
1 12 oz can ginger ale
1 12 oz can sliced pineapple
4 oz honey and 2 oz of maple syrup Make sure you use large roasting pan
Remove ham from package and pat dry with paper towel
Cut top of ham with knife in diamond pattern insert cloves every inch
Coat top with mustard
Cover with brown sugar and pack down
Slowly pour on ginger ale
Pour on honey and maple syrup
Using toothpicks place pineapple slices on top pouring remaining juice into bottom of pan
Pepper to taste
Cover top with tin foil
Bake at 350 or 10 minutes per pound.
Gravy
Strain liquid from bottom of the pan (cloves do not taste great)
Strain liquid in bottom place liquid in a large sauce pan bring to boil
Mix 2 tablespoons cornstarch with 2 tablespoons water
Wisk cornstarch mixture into ham liquid stir until thick
The difference between fresh and city hams is 37% of your daily sodium but for this dish it’s worth in once or twice a year.
