Lime cupcakes with coconut frosting

It’s raining today and I want summer.  I’m bore this is a bad combination.  I’m going to bake my way to summer.  Here is a lime cupcake with coconut frosting I came up with  to get put me in a summer mood.

Drys
1 1/2 cup all purpose flour
1 1/2 teaspoon of baking powder
1/2 teaspoon salt
Wet
1 /2 cup softened butter
1 cup white sugar
2 large eggs beaten for 30 seconds
3 table spoons of lime juice
Zest from 2 limes
1/4 cup of mayonnaise
1/2 cup whole milk

Preheat oven to 350

Mix flour, baking powder, and salt in a medium bowl

In a large bowl mix softened butter and sugar until fluffy
Add beaten eggs, beat for 30 seconds ( I hope you beat them before you put them in if not go ahead not, we’ll wait.)
Add lime juice beat
Add milk beat
Add Mayo beat
Add zest beat

Add flour mixture in thirds until fully incorporated

Line muffin tins with cupcake liners

Bake at 350 for 22-25 minutes or until a toothpick come out clean

Let cool

Frosting
1 package cream cheese
1/2 cup softened butter(1 stick)
3 cups powdered sugar
1 teaspoon whipping cream
1/8 teaspoon salt
1 teaspoon coconut extract
1 7 oz package of sweetened shredded coconut for topping
