Mole’

I decided to try my hand at something new and different.  I decided to try making mole’ from scratch.  If you like spice this one is for you. (Feel free to make it hotter on not hotter.)  This one pushed me right up to my I can take it level.  I hope you like it.

4 cups chicken broth
6 cloves of garlic
5 all spice berries
5 whole cloves
2 cinnamon sticks
2 tablespoons cumin seeds
1 tablespoons thyme dried leaves
2 teaspoon chili powder
2 teaspoon chipotle powder
1 can chipotle Chilean with adobo sauce
2 tortillas cut in 1/2 strips
4 tomatoes
10 oz tomatillos
1 onion white or yellow
3 oz pine nuts
1/4 cup raisin
8 oz 92% cocoa chocolate

Rehydrate dried pepper in hot water

In a large cast iron pan add onion and garlic tomatillos and tomatoes or bake for 20 minutes at 350
In a spice grinders add all whole spices and grind until smooth
Place chicken stock in a large stock pot
Add contents of skillet to stock pot
Add spices
Chop chocolate and add
Add chipotle pepper with adobo sauce
Add tortilla and pine nuts
Let simmer for 45 minutes
(If too hot add honey)

In a blender blend all items until smooth an immersion blender works great too.

Serve with cilantro and sour cream

Serve with chicken or enchiladas
