Filing
6 fresh peaches cut into 1/4 inch slices
1/4 cup sugar (I used coconut sugar)
1/2 teaspoon cinnamon
1/2 cup water
1 tablespoon lemon
1 teaspoon lemon zest
Slurry
1 1/2 teaspoon cornstarch
1 1/2 teaspoon water
Add all ingredients to a sauce pan on medium. Bring to a boil let thicken
Remove from heat
Topping gluten free
Drys
1 1/2 cup flour (I used coconut flour)
1 teaspoon baking powder
1/3 cup sugar (I used coconut sugar)
Wets
4 oz butter cold grated in with a
cheese grater
1/2 cup buttermilk
Mix drys and set aside
Add butter mix to form little pellets
Add buttermilk
Mix until all ingredients are incorporated
Preheat oven to 375
In a oven safe dish place peach mixture
Top with dough mixture
Bake for 15 -18 minutes or until top is golden brown
Top with ice cream or whipped cream
