This is a recipe that my daughter and I came up with (Although Leslie drove the bus) She is a vegetarian and a runner so this was a way that she got more protein in her diet. This is a healthy update to a classic potato latke. Hope you like it.
2 cups grated potatoes
3/4 cups lentils 1 1/2 cups water summered for 40 minutes you want them soft.
1/2 cup shredded carrots
1/4 cup diced red onion
2 tablespoon flour (you might need to add more)
1/4 cup dried chives
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cumin
Add and butter for cooking
Place lentils in a bowl and mush
Add potatoes mix
Add carrots and onion
Add spices mix
Add flour mix (you may need more flour until mixture stick to side of the bowl when pressed (As Leslie says why dirty a second bowl she mashes the lentils in the same bowl)
Heat medium pan on medium
Add oil and butter
When oil and butter are hot
Make thin pancakes add to oil
Brown in both sides
Remove to rack to drain
Sauce
1 tablespoon chili garlic sauce
1/4 lite soy
1/2 teaspoon powdered ginger
1/2 teaspoon powdered garlic
Mix all ingredients let sit for ten minutes
