1 pound catfish fillets (8oz portions)
1 teaspoon sea salt
1 teaspoon paprika
1 teaspoon chipotle powder
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon garlic powder
2 teaspoon onion powder
4 oz unsalted butter
Pan that can get and hold heat
Mix spices together
Coat fish with seasoning
Heat pan to medium high
Add butter
Cook fish on both sides until dark brown not black about 4-6 mi
Serve with remoulade
