16 oz green beans cleaned
2 strips smoked bacon cut in bite size pieces
1 red pepper cut in thin slices
1/2 red onion sliced thin
Dressing:
1/3 cup olive oil
3 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
4 grinds black pepper
1 pinch salt
2 minced garlic cloves
1/4 teaspoon red pepper flakes
render bacon and drain fat save 1 teaspoon to use fat in dressing
In bowl put the balsamic vinegar
Add Dijon mustard
Add salt and pepper
Add the red pepper flakes
Drizzle in olive oil and bacon fat.
Set aside
Par cook green beans in salted water for 3 minutes
Drain
In coat skillet with oil
Spread green beans and cook for 3 minutes
Add red pepper and onion
Add garlic
Dress with sauce and serve
